Recipe for vegan Alfredo pasta as promised.
- Gluten free penne (I use 100% corn pasta, it holds together better and is tastier, also it’s yellow - BONUS)
- soy milk
- 1 tbspn plain flour
- vegusto cheese
- Toffuti cream cheese
- 3 cloves garlic
- Button Mushrooms
- Broccolini/any other kind of greens you like, I used zucchini also.’
- 1/2 red onion
Mix about 2 tbspns of toffuti, with 1 cup of soy milk, flour, 1/3 block of vegusto cheese, 1/2 cup of water in a blender until smooth. Add salt and pepper and herbs to taste.
Cook mushrooms, onion and garlic in a large pan, add the greens later so they stay relatively firm. When the pasta is cooked, add the sauce and greens and stir until the flavour develops in the sauce.
